5 Questions to Ask Before Booking Authentic Neapolitan Pizza Catering from La Pizza Napolitana ATL

Choosing authentic Neapolitan pizza for your wedding is about more than deciding what’s for dinner, it’s about creating an experience your guests will remember long after the last slice is served.

Every pizza caterer has a different approach, from the ingredients they source to how they prepare and serve each pie. Understanding what makes authentic Neapolitan pizza unique can help you choose a caterer that delivers exceptional flavor, craftsmanship, and an unforgettable dining experience. When you know what to look for, you can feel confident that your wedding meal will be just as memorable as every other moment of your celebration.

Here are five questions worth asking any pizza caterer you’re considering.

  1. Where Did Your Pizzaiolo Actually Train?

Why It Matters

Authentic Neapolitan pizza isn’t simply a style, it’s a centuries-old tradition protected by the Associazione Verace Pizza Napoletana (AVPN) in Naples, Italy. Learning these techniques takes dedicated training, and there’s a meaningful difference between being inspired by Italian pizza and learning directly from the source.

What We Do at La Pizza Napolitana ATL

Our pizzaiolo, Milo, trained at the AVPN school in Naples, Italy, where he learned the traditional methods that define true Neapolitan pizza.

Every pizza is hand-stretched, carefully assembled using authentic Italian ingredients, and prepared according to the same techniques practiced throughout Naples today. We believe honoring those traditions is what makes every bite memorable.

  1. How Long Does Your Dough Ferment?

Why It Matters

Few couples think to ask this question, but it’s one of the biggest indicators of quality.

Slow fermentation develops deeper flavor, creates the signature airy crust Neapolitan pizza is known for, and requires planning well before your wedding day. While many doughs are made the same day, traditional Neapolitan dough is given time to develop naturally.

What We Do at La Pizza Napolitana ATL

Every batch of dough ferments for 48 hours using 100% Italian flour before it ever arrives at your wedding.

That process takes patience, but it’s one of the reasons our pizzas have their signature light texture and rich flavor.

In a sense, we start preparing for your wedding two days before it begins.

  1. Where Do Your Ingredients Come From?

Why It Matters

Authentic Neapolitan pizza is defined as much by its ingredients as it is by its technique.

Rather than simply asking whether ingredients are “high quality” ask where they’re sourced. Traditional Italian ingredients have distinct flavors that are difficult to replicate.

What We Do at La Pizza Napolitana ATL

We source imported Italian ingredients, including:

  • 100% Italian flour
  • Italian tomatoes
  • Italian mozzarella
  • Olive oil
  • Salt

Our pizzas feature DOP-certified San Marzano tomatoes, grown in the soil surrounding Naples, alongside carefully sourced Italian cheeses and other traditional ingredients.

Our antipasti selections and gelato offerings also feature imported Italian products, allowing couples to create an experience that feels authentically Italian from cocktail hour through dessert.

It requires extra planning and sourcing, but we believe authenticity is worth it.

  1. What Comes With the Pizza?

Why It Matters

The pizza is only one part of the experience.

Ask what the full presentation looks like, how cocktail hour is handled, and whether dessert is included. Some caterers simply arrive with an oven. Others create multiple moments throughout the evening.

What We Do at La Pizza Napolitana ATL

Our setup includes a fully styled serving station complete with our signature Fontana Forni oven, serving tables, wooden risers, linens, and menu signage.

Couples can also enhance their celebration with:

  • Antipasti Cart: A beautifully styled, server-attended cart featuring Italian meats, artisanal cheeses, olives, and seasonal fruit served directly to guests during cocktail hour. Premium selections include imported specialties and seasonal accompaniments.
  • Gelato Cart: Authentic Italian gelato served by our team during dessert, available in curated two- flavor or four-flavor selections chosen before your wedding.

Together, these offerings transform dinner into multiple experiences spread naturally

throughout the evening.

  1. Is the Pizza Made Ahead of Time or Throughout Service?

Why It Matters

Fresh pizza has a very short window.

The best Neapolitan pizza is enjoyed moments after leaving the oven. Ask whether pizzas are prepared throughout service or made all at once before guests begin eating.

What We Do at La Pizza Napolitana ATL

Every pizza is prepared on site in our Fontana Forni oven, reaching temperatures of approximately 850°F.

Each pizza cooks in about 90 seconds before being served immediately.

Rather than preparing pizzas ahead of time, we continue crafting fresh pizzas throughout the entire service window so guests enjoy every slice at its best.

While dinner is served, guests naturally gather around the oven, watching dough being stretched, pizzas baked, and fresh pies emerge one after another. It becomes more than dinner,  it becomes one of the evening’s most memorable experiences.

More Than Catering. A Celebration Your Guests Will Remember.

La Pizza Napolitana ATL is a family-owned business built on authentic Italian tradition, served with the warmth and passion that define everything we do.

For owners Milo & Yesenia and the entire team, weddings aren’t simply another event on the calendar. They’re milestones worth celebrating with incredible food, genuine hospitality, and an atmosphere that brings people together.

As guests gather around the oven, conversations begin, fresh pizzas are shared, and memories are made long after the ceremony ends.

That’s the experience we strive to create at every wedding we serve.
